Make Shift Lunch πŸ’š

Have you ever gone to the grocery store and realize the items on your list aren’t all there or the produce is not looking the best?

This happened to us this week… tough to make a salad with only the fixings of cucumbers, arugula & spinach. Yesterday I decided to get creative with the items we had in the fridge to make one hearty meal that tasted delicious too!

  • Roasted Mushrooms
  • Roasted Sweet Potatoes
  • Rotisserie chicken
  • Spinach
  • Arugula
  • Splash of Tamari
  • Splash of Hot Sauce

Voila!

Why choose Sweet Potatoes? (not only because they’re delicious)

Sweet vegetables soothe the internal organs of the body and energize the mind. They’re root vegetables, they are energetically grounding, which helps to balance out the β€œspaciness” people often feel after eating other kinds of sweet foods. Adding in sweet vegetables helps to crowd out less healthy foods in the diet.

What about mushrooms?

Health Benefits:

Boosts immunity, helps reduce risk of stroke, regulates blood pressure, promotes heart health

Dark leafy greens are a good addition to any diet to help with digestion, skin, reducing inflammation and so many other advantages.

Next time you open the fridge and/or pantry only to see not all the ingredients you wanted or needed why not try out a new recipe you can call your own! You never know what the outcome may be.

Also, this whole bowl took 10-15 minutes in total to put together, so put down the phone to Skip the Dishes – its time to experiment!
