Have you ever gone to the grocery store and realize the items on your list aren’t all there or the produce is not looking the best?
This happened to us this week… tough to make a salad with only the fixings of cucumbers, arugula & spinach. Yesterday I decided to get creative with the items we had in the fridge to make one hearty meal that tasted delicious too!
- Roasted Mushrooms
- Roasted Sweet Potatoes
- Rotisserie chicken
- Spinach
- Arugula
- Splash of Tamari
- Splash of Hot Sauce
Voila!
Why choose Sweet Potatoes? (not only because they’re delicious)
Sweet vegetables soothe the internal organs of the body and energize the mind. They’re root vegetables, they are energetically grounding, which helps to balance out the βspacinessβ people often feel after eating other kinds of sweet foods. Adding in sweet vegetables helps to crowd out less healthy foods in the diet.
